
Uva Tosca, a blushing ancient grape variety, is nowadays vinified solely by Claudio. After a gentle press, the juice ferments in a steel tank and rests until the following spring, before secondary fermentation in the bottle. The result is a fascinating sparkling wine with a delicate rosé nuance, lively bubbles, and aromas of yellow peach and grapefruit that open up in a vertical sip.
