After much anticipation, we are delighted to share the new wines from Mattia Corbellini of Cherubini.
Based in the Parco delle Colline di Brescia, just northwest of the city in eastern Lombardia, Mattia farms organically 2.2 hectares of vineyard planted in the late 1990s on calcareous-clay soil.
In the cellar, the wines ferment with indigenous yeasts in concrete tanks and age until the following spring in new and old barriques. After resting on the lees in bottle, Mattia disgorges every bottle by hand, topping up with the still wine from the same vintage and no dosage.
With a deep knowledge of the land and a personal interpretation of winemaking, Mattia crafts refined and original Metodo Classico wines, far away from their Franciacorta neighbours.
This first release features our favourite version of Sui Generis, a 2021 Chardonnay aged on the lees for three years, and the sumptuous Subsidium, a 2018 Chardonnay and Pinot Noir blended with 15% reserve wine, and aged on the lees for five years.
