After a good rest in our cellars, we are thrilled to release a new Exceptis Blanc de Noirs from Cherubini in Lombardy.
From the bright 2020 vintage, the Pinot Noir was whole bunch pressed and fermented in concrete. After five months in barriques, the wines was bottled with twenty percent of reserve wine and rests on the lees for twenty-four months.
The generous addition of reserve wine translate in a complex, gorgeous sparkling wine. Precise and elegant bouquet, the palate displays soft, refined bubbles and an incredibly sustained finish. Disgorged in February 2023. Zero dosage
